Stuffed Pepper Soup

Stuffed Pepper Soup

(Gluten & Dairy Free)

Hearty, comforting, warm, and incredibly flavorful!

Prep Time: 15min Cook Time: 30mins

Serves 4-6

INGREDIENTS

  • 2 tablespoons olive oil
  • 1-pound ground beef
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 tomatoes, diced (you can also use 1 can of diced tomatoes)
  • 2 cloves garlic, minced
  • 4 cups beef, chicken or vegetable broth
  • salt and fresh pepper to taste
  • 2 cups cooked long-grain white rice

Method:

  1. In a large soup pot heat olive oil over medium heat and add ground beef.
  2. Cook until browned.
  3. Add onions, pepper, tomatoes and garlic.
  4. Season with salt and pepper and continue to cook over medium-low heat until vegetables are tender, about 5 minutes.
  5. Add broth.
  6. Season with salt and pepper.
  7. Cover and cook over low heat for 20 to 30 minutes, or until heated through.
  8. Stir in cooked rice.
  9. Serve.
